According to the chinese legend, oolong means “Black Dragon”. The production of oolong tea requires precise skills and is done following age-old traditions. The critical moment is when the oxidation process is stopped. Oolong tea is semi-oxidized (20 to 80%). It is somewhere between green and black tea. Its taste varies from mild, floral with a hint of sweetness to generous, woody and long-lasting, depending on the oxidation level.
